Уважаемые читатели! Этот номер журнала выходит в канун юбилей- ной даты: 90 лет назад, 26 ноября 1929 г., постановлением Наркомата внешней торговли СССР за подписью его министра А.И. Микояна был создан Всероссийский научно-исследовательский институт птицеперерабатывающей промышленности (ВНИИПП). Наш институт был одним из первых в череде НИИ пищевой индустрии, образованных молодой советской властью. С первых дней деятельности во ВНИИПП началась разработка научных основ в области технологий и техники, создания ассортимента, обеспечения качества и безопасности продукции птицеперерабатывающей отрасли. При этом жизнь постоянно выдвигала новые задачи, требовавшие неотложных решений. Во время Великой Отечественной войны ученые института разработали ряд медицинских препаратов для нужд фронта, а после войны их усилия были направлены на восстановление разрушенной отрасли, а затем на ее техническое совершенствование. После переезда института из Москвы в п. Ржавки Московской области была создана комплексная научно-экспериментальная база, обеспечившая новые исследовательские возможности для коллектива. Строительство жилья и создание социальной инфра- структуры в поселке привлекло во ВНИИПП молодых специалистов и аспирантов, многие из которых в будущем стали видными учеными и пополнили кадровый состав других научных и образовательных организаций, а также руководящих органов союзных и ведомственных учреждений. В институте появились новые лаборатории, и спектр исследований расширился: наряду с современными разработками для птицеперерабатывающей отрасли были созданы технологии для клеежелатиновой промышленности, сублимационной сушки пищевых продуктов и эндокринно-ферментных препаратов, производства продуктов детского и специального пита- ния, белковой сосисочной оболочки с использованием новых физико-химических способов обработки сырья и т.д. В стране был организован ряд опорных пунктов института, решающих специфические задачи, и созданы образцово-пока- зательные производства на основе результатов работ ВНИИПП. В 1979 г. за достигнутые успехи и в связи с 50-летием институт наградили орденом Трудового Красного Знамени. За весь период работы ВНИИПП 18 раз менялась его ад- министративная подчиненность, но научная деятельность всегда была направлена на конечный результат — внедрение в отрасль новых разработок. Как в трудные 90-е годы, так и сегодня усилия института ориентированы на комплексное эффективное использование сырья, создание новых видов продукции, в том числе из яиц, разработку оборудования для обвалки тушек птицы и убойных цехов малой мощности, стандартов и методов исследования птицепродукции. Результаты деятельности института — это труд нескольких поколений ученых, вложивших свои знания и опыт в раз- витие отрасли. Спасибо им за это! Успешная история ВНИИПП позволяет нам с оптимизмом смотреть в будущее и надеяться, что грядущий 100-летний юбилей будет отмечен новыми значительными достижения- ми наших сотрудников.

Dear readers, This journal issue appears in the eve of anniversary date: The All-Russian Scientific Research Institute for Poultry Processing Industry (VNIIPP) has been created 90 years ago, on November 261929, after the decree of the USSR World Trade Commissar and has been signed by A.I. Meckoyan minister. Our Institute has become one of the first institutes in food industry institutes turn being created by the young Soviet authority. VNIIPP has begun to develop the scientific bases of technology and techniсs and the assortment creation and poultry products quality and safety assurance from the first days of its activity. The life put forward constantly some new tasks wherein that required urgent decision. During the Great Patriotic War the Institute scientists have developed a number of drugs for the front needs. After the War their efforts were directed to the destroyed branch recovery and than to the branch technical improvement. After the Institute movement from Moscow to Rzhavki township in Moscow region the complex scientific research base has been created that has given some new research possibilities for the collective. Housing construction and social infrastructure creation has attracted young specialists and graduate students to VNIIPP. Many of them have become famous scientists in future and have replenished other scientific and educational organizations staff and also some governing bodies and departamental institutions staff. Some new laboratories have appeared in the Institute, and the researches spectrum has expanded. Along with the modern developments for poultry processing branch, some technologies have been created for glue-and-gelatin industry, freezedrying of foods and endocrine-enzyme preparations, baby and special food production, protein frankfurter casing production with usage of new physical and chemical ways of raw material treatment, and so on. Some supporting points of the Institute have been organized in the country that are deciding some specific tasks. Exemplary model productions have been created at the base of VNIIPP researches results. The Institute has been awarded the Order of the Red Banner of Labor for the successes achieved and in connection with the Institute 50 Anniversary in 1979. The Institute administrative subordination changed 18 times during all the work period but the scientific activity has always been directed to the end result, that is, the new developments introduction in the branch. Both in difficult 90th years and now the Institute efforts are oriented at complex effective raw material usage, new products creation including from eggs, the equipment development for poultry carcasses deboning and slaughter low power workshops creation, the development of poultry products standards and analysis methods. The Institute activity results are the labor of several scientist generations that have invested their knowledge and experience in the branch development. We thank them for it! The successful VNIIPP history gives our the possibility to look into the future and hope that upcoming centenary will be marked by the new significant achievements of our employees.
